Application Notes | Acetic Acid, Glacial is an excellent solvent for many organic compounds. Acetic acid is widely used in manufacturing either as starting material or as a solvent. In the food industry, dilute solutions are used for preparation and preservation. Because acetic acid is a weak acid, it is effective as a buffer at pH 4.75 ± 1. This buffer can be prepared by titrating acetic acid with an hydroxide or by mixing equal volumes of equimolar acetic acid and sodium acetate solutions. Other uses for acetic acid which have been reported are: Used in polyacrylamide gel fixation for sequencing gels and in autoradiography, as a background electrolyte in the capillary electrophoresis/electrospray ionization MS(CE/ESI-MS) analysis of carbonic anhydrase from red blood cells, used in fluorescent staining methods for proteomic analysis of 2-D gels, involved in oxidoreduction potential in conjunction with acetic acid and other factors on the growth, acidification, and membrane properties of Lactobacillus plantarum, inhibit E. coli growth as related to methionine biosynthesis, to test heat resistance of Paenibacillus polymyxa with respect to pH and various acids, can be used to effect the chlorinative ring expansion of [2.2.1]- and [2.2.2]-bicyclic compounds, utilized in the total synthesis of demethylasterriquinone B1, synthesis of disaccharidic 2,3-enopyranosyl cyanides and 2-C-2-deoxy pyranosyl cyanides. |
